Jimbaran — Indonesian culinary authority William Wongso led a seven-day residency at InterContinental Bali Resort in Jimbaran from Tuesday, 18 August, to Monday, 24 August 2026, working with Executive Chef Indrajit Saha and the resort’s culinary team to refine the property’s Indonesian offerings.

The programme was designed to celebrate and preserve the character of regional Indonesian cuisine while aligning it with the resort’s standards for presentation and service, according to InterContinental Bali Resort and coverage by Le Mariage Indonesia.

Wongso, long recognised for documenting and promoting Indonesian food traditions from across the archipelago, worked directly with the kitchen team to review existing recipes rather than create an entirely new menu.

Refining flavour without losing identity

According to Le Mariage Indonesia, the residency involved a systematic review of dishes already served at the resort’s outlets, looking at ingredients, cooking methods and the flavour profile expected when each dish reaches the table.

Recipes were retasted and adjusted using ingredients, techniques and regional characteristics associated with their origins, with the stated aim of sharpening rather than replacing the dishes’ existing identities.

InterContinental Bali Resort described the collaboration as part of its commitment to Indonesian gastronomy, noting that Wongso’s mentoring focused on maintaining the recognisable character of each regional dish while improving consistency and execution in a luxury resort setting.

FoodieS, an Indonesia-based food and hospitality outlet, reported that the residency concentrated on regional cuisine and indigenous ingredients, including traditional preparation methods and the balance of flavours that define different Indonesian dishes.

From kitchen review to guest offering

The resort stated that the lessons from the residency will be carried into the ongoing development of Indonesian options at several of its dining venues, allowing guests to experience the results through dishes that continue to be refined and served over time.

This approach positions the residency as more than a short-term appearance, framing it as a working collaboration intended to influence the resort’s food-and-beverage programme beyond the week-long kitchen review.

For international visitors, the resort’s messaging highlights food as a direct introduction to Bali and Indonesia, describing gastronomy as an integral part of the guest experience alongside location and hospitality.

Coverage in Le Mariage Indonesia similarly presents the residency as a way to strengthen the expression of Nusantara flavours at the resort, emphasising the importance of regional identity in dishes served to both domestic and overseas guests.

Residency details

  • Location: InterContinental Bali Resort, Jalan Raya Uluwatu No. 45, Jimbaran, South Kuta, Badung, Bali.
  • Dates: 18–24 August 2026.
  • Participants named: William Wongso, Executive Chef Indrajit Saha and the resort’s culinary team.
  • Planned outcome: Continued development and refinement of Indonesian offerings across selected resort dining outlets.

Context

According to Le Mariage Indonesia, the residency followed an internal review of Indonesian dishes already associated with the resort, examining ingredients, cooking methods and flavour to better reflect their regional origins.

InterContinental Bali Resort’s press information frames the collaboration with Wongso as part of a broader effort to celebrate Indonesian gastronomy and offer guests a deeper connection to the country’s culinary heritage through carefully prepared regional dishes.

FoodieS reports that the residency featured hands-on mentoring sessions and recipe refinement with the culinary team, aimed at integrating indigenous ingredients and traditional techniques into a polished resort dining experience.
